BONES FROM ARCHAEOLOGICAL DEPOSITS IN YORK: AN OVERVIEW OF RESULTS TO 1986.

Results of studies of bone assemblages from sites in York are summarised in order to identify long-term trends and specific topics for future research. The meat supply of the city was heavily dependent on beef from the second century until after the Norman Conquest, when sheep assumed a greater importance. Biometrical investigations indicate little change in the morphology of livestock until the eighteenth century. Exploitation of birds concentrated on locally available wetland taxa,though fish bones indicate an increasing concentration on marine species from the tenth century onwards. It is proposed that subsequent bone studies in York should be directed towards answering specific questions, rather than merely describing what was found on a site-by -site basis.
